Buffalo Shrimp Tacos

Hi all!

When I came across this recipe on Pinterest I knew I had to make it because Jacob loves Frank's. However, I don't eat chicken so I adapted it to shrimp and it's delicious!

Ingredients:

⅓ cup flour
3 tablespoon cornstarch
⅛ teaspoon cayenne pepper
1 teaspoon garlic powder

⅓ cup buffalo wing sauce (Frank’s Buffalo Wing) , plus extra for garnishment
1 Tablespoon olive oil
10 6-inch yellow corn tortillas

Toppings:

Shredded butter or Iceberg Lettuce
Cilantro
Green onions

I also have been following this recipe in making my own hard shelled tacos. I tried this recipe with the shells soft and it's much better with a crunch. Simply take 6-10 corn tortillas and wrap them in a wet paper towel and microwave them for 30 seconds. Then spray both sides with Pam and drape in the oven like shown below. Bake at 375 for 7-10 minutes until crispy!

Dredge the shrimp in the flour mixture and cook over medium heat with oil a few minutes on each side until pink. Then add to bowl and toss with the Frank's until coated.

Top with lettuce, cilantro and green onions....at least that is what we do! It would be yummy with avocado and ranch dressing too!

Guest Bedroom Paint Options

Hi all!

I'm back with some paint options I'm considering for the guest room. If you don't remember ....this is the room. I am tempted to go dark since I have all white bedding.

I know they are hard to see against the tan wall so I labeled them.

I'm unsure.....maybe I need to go in a different direction.

Hi all!

I'm back with pictures of the wall I stenciled this last weekend. Jacob and I both like it because it sets off the little nook that is essentially our entryway table, even though it's more in the living room.

Not too shabby for a free project. I had the paint and the stencil I borrowed from a friend! Now to find something to put on the wall! :)

Happy Valentine's Day!

Jacob and I are laying low this year and celebrating with Miss M tonight. This weekend we will go out to dinner and maybe a movie, which we haven't done in forever....so that will be fun!

Guest Room Progress

Happy Friday!

It has seemed like a long week. We had lots going on, some of which got cancelled and then I was sad. Me being bored and stuck in the house usually means I do something to make myself happy.....like stencil a wall. Oh, yes I did. Pics coming soon! Anyway, I'm here to share a few updates to the guest room. Next comes paint and a few accessories!

If you're new here or need a refresher, here is the before.......yeah, not pretty!

We added curtains, a new coverlet, a leaning mirror, and new nightstands:

The duvet on the bottom of the bed is the same one, just reversed. I'm not sure the blue pillow is staying but it works for now. Not too bad for a few small changes!

Guacamole Recipe

Hello!

One of my favorite snacks to make for Jacob and I or for a group is guacamole. My love affair with guac all started with a little place called Rosa Mexicano. If you're going to be in NYC (my fav location is Lincoln Center but all are good). They make your guacamole table side and I haven't been the same sense....okay, I'm being dramatic but I really love it and it taught me how I like my guacamole.

Here is how I make my guacamole:

I whip the avocado(s) with an electric mixer because I like it really smooth. I also buy my avocados when their green and ripen them myself so I know just how ripe they are. I hate to buy them dark and mushy and then cut into them and they are dark inside (over-ripe).

After a beat the avocado(s) I add in the rest of the ingredients. I love the lime juice and it helps it not to brown. Some people add jalapenos....you can do what you like but this is how I like mine. If I'm making it just for Jacob and I add more cilantro and salt.

I love to serve it with Hint of Lime or Hint of Jalapeno chips for an extra kick. Yum!

$100 Month: January 2012 Edition Part II

Hello!

We enjoyed a low key weekend at home. Jacob and I both like a good mix of being productive and being lazy on the weekends. We made some great progress on the guest room, which I'll be sharing this week.

If you're keeping track I still had $25 to spend from January from the $100 we budget each month. To see where $75 went and for a recap go here.

I really couldn't figure out how to love the room with the duvet I purchased. It was dark brown with pinstripes and to be honest....it wasn't me. See it here. I was trying to push my boundaries but I'm a neutral girl at heart. The good news is for $30 (yeah, yeah, yeah I went over $5...sue me....you sound like my husband) I got a white coverlet.

So for $100 I got 2 new bedside tables and a new bed covering. Not too shabby!

Being limited on my purchases is really making me think them through and really really love them. If you're like me and used to waste money on DIY or other things that never really worked it might be worth a shot.

Anyone else on a DIY/Home budget?
